Costa Rican Style Fish with Black Beans

Ingredients
  

For the Fish Marinade

  • 300 g fish fillet tilapia, bass, or catfish
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon freshly squeezed lime or lemon juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon fresh cilantro or 1 teaspoon dried cilantro
  • 1 clove garlic minced
  • ½ teaspoon sugar
  • 1 teaspoon salt
  • Freshly ground black pepper to taste

For Baking

  • Vegetable oil for brushing
  • 2 cups cooked rice use half white, half brown for extra nutrition
  • ½ cup salsa ensure alcohol-free
  • ½ cup cooked black beans or canned beans, rinsed and drained
  • Handful of fresh cilantro for garnish

Step-by-Step Instructions

 

Step 1: Marinate the Fish

 
In a large bowl, combine the fish fillet with all the marinade ingredients: orange juice, lime juice, vegetable oil, cilantro, garlic, sugar, salt, and black pepper. Mix well to coat the fish evenly. Cover and let it marinate for 20 minutes at room temperature (or in the refrigerator for up to 2 hours).

 

Step 2: Preheat the Oven

 
Preheat your oven to 400°F (200°C) .

 

Step 3: First Bake

 
Line a baking rack with aluminum foil and fold the four corners to create a shallow tray. Brush a thin layer of vegetable oil over the foil to prevent sticking. Place the marinated fish on the foil and pour any remaining marinade liquid over it.
 
Bake for 15 minutes, until the fish is halfway cooked. Remove from the oven and let it cool slightly.

 

Step 4: Assemble the Dish

 
Line a square baking pan with aluminum foil. Spread the cooked rice evenly across the bottom of the pan. Top with the salsa, black beans, half of the fresh cilantro, and the partially baked fish along with all the remaining liquid from the first bake.

 

Step 5: Final Bake

 
Return the pan to the oven and bake at 400°F (200°C) for another 10 to 15 minutes, or until the fish is fully cooked and flakes easily with a fork.

 

Step 6: Garnish and Serve

 
Remove from the oven and garnish with the remaining fresh cilantro. Serve hot and enjoy!
