And here is a game-changing tip: when the chicken finishes cooking, give it a minute to cool off before you toss it with the sauce. That brief rest makes the coating stay extra crispy, so you get that perfect texture in every single bite.

Ingredient Substitution Guide

Cooking the Chicken in the Air Fryer

Step 1: Arrange the Chicken
Place the coated chicken pieces in your air fryer basket in a single, even layer. Make sure they are not touching or overlapping this allows the hot air to circulate properly and create that signature crispiness. If your basket is small, cook in batches.

Step 2: Spray with Oil
Lightly spray or drizzle oil over the chicken pieces until there is no visible dry cornstarch remaining. This step is key to achieving that golden, crunchy exterior.

Step 3: First Air Fry Cycle
Air fry at 450°F (230°C) for 8 minutes, or until the chicken turns a pale golden color.

Step 4: Flip and Finish
Carefully flip each piece (or shake the basket) and air fry for another 5 to 6 minutes, until the chicken is beautifully golden and crispy.

Important Note: The air fryer cooks chicken much faster than traditional stovetop methods. To keep the meat tender and juicy, do not wait until the chicken turns a deep, dark golden brown. The pieces will already be wonderfully crispy once the edges turn golden, and the inside will be perfectly cooked. Overcooking will dry out the chicken, so trust your eyes and pull them out at the right moment!

Making the Sweet and Sour Sauce on the Stove

While the chicken is finishing up in the air fryer, it is time to bring the sauce together on the stovetop. This part comes together quickly, so have everything ready to go.

Step 1: Sauté the Aromatics
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger and stir-fry for a few seconds until they release their fragrant aroma. Be careful not to burn them just a quick sizzle is all it takes.

  • 2 teaspoons minced ginger
  • ½ small white onion chopped
  • 1 bell pepper chopped (use a mix of colors for visual appeal)

    2. Air Fry the Chicken

    1. Preheat your air fryer to 450°F (230°C) .
    2. Place the coated chicken pieces in the air fryer basket in a single layer, without overlapping. If your air fryer is small, cook in batches to avoid overcrowding.
    3. Lightly spray or drizzle oil over the chicken pieces until there is no visible dry cornstarch remaining.
    4. Air fry for 8 minutes, until the chicken turns a pale golden color.
    5. Flip the chicken pieces (or shake the basket) and air fry for another 5 to 6 minutes, until the chicken is beautifully golden and crispy.
    6. Note: The air fryer cooks the inside of the chicken faster than stovetop methods. To keep it juicy, do not wait until it turns a deep brown once the edges are golden, the chicken is perfectly cooked and crispy.
    7. Once done, transfer the chicken to a large plate to cool slightly. This brief rest helps the coating stay extra crunchy.

    3. Prepare the Sauce

    1. While the chicken is cooking, mix all the sauce ingredients together in a small bowl: ketchup, rice vinegar, soy sauce, brown sugar, water, and cornstarch. Stir well until the cornstarch is completely dissolved. Set aside.
