1. Marinate the Chicken
- In a large mixing bowl, combine the chicken pieces, vegetable oil, and salt. Mix well and let it marinate for 10 minutes.
- When you are ready to cook, add the cornstarch to the chicken. Stir well to coat every piece. The coating should look slightly uneven, with a little dry cornstarch still visible this helps create that extra-crispy texture.
2. Air Fry the Chicken
- Preheat your air fryer to 450°F (230°C) .
- Place the coated chicken pieces in the air fryer basket in a single layer, without overlapping. If your air fryer is small, cook in batches to avoid overcrowding.
- Lightly spray or drizzle oil over the chicken pieces until there is no visible dry cornstarch remaining.
- Air fry for 8 minutes, until the chicken turns a pale golden color.
- Flip the chicken pieces (or shake the basket) and air fry for another 5 to 6 minutes, until the chicken is beautifully golden and crispy.
- Note: The air fryer cooks the inside of the chicken faster than stovetop methods. To keep it juicy, do not wait until it turns a deep brown once the edges are golden, the chicken is perfectly cooked and crispy.
- Once done, transfer the chicken to a large plate to cool slightly. This brief rest helps the coating stay extra crunchy.
3. Prepare the Sauce
- While the chicken is cooking, mix all the sauce ingredients together in a small bowl: ketchup, rice vinegar, soy sauce, brown sugar, water, and cornstarch. Stir well until the cornstarch is completely dissolved. Set aside.
4. Cook the Vegetables and Sauce
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger. Stir-fry for a few seconds until they release their fragrant aroma do not let them burn.
- Add the chopped onion and bell pepper. Stir-fry for about 30 seconds. They should remain slightly crunchy and vibrant.
- Give the sauce mixture a quick stir to re-dissolve the cornstarch, then pour it into the skillet. Stir continuously as the sauce comes to a simmer. Within 1 to 2 minutes, it will thicken into a glossy, rich glaze.
5. Combine and Serve
- Add the crispy air-fried chicken back into the skillet. Gently toss everything together until every piece of chicken is evenly coated with the sauce.
- Transfer to a serving plate immediately and serve hot as a main dish.

Recipe Notes
- Best Cut of Chicken: I highly recommend using chicken thighs for this recipe. They stay juicy and tender in the air fryer. Chicken breast can dry out quickly, so if you use it, reduce the air frying time by 3 to 4 minutes.
- Do Not Overcrowd: Give the chicken pieces space in the air fryer basket for even crisping. Cook in batches if necessary.
- Rest Before Tossing: Let the cooked chicken rest for a minute before adding it to the sauce this helps maintain its crispiness.
